Spicy "Portuguese style" rice
I love this recipe for 'Portuguese style' spicy rice or Nandos style spicy rice. Its great as a side or even a main. Or you can even cook in advance and serve it cool as a salad at a BBQ's in the summer.
Serving size is for two people:
Ingredients
1 cup rice
1 1/2 cup water
pinch of chilli flakes( or to your personal taste)
1 chicken stock cube(I use knorr)
1/2 tsp turmeric
1/3 cup mixed pepper (I use red or yellow and red if I have it)
1/3 cup frozen peas
salt and pepper to season
dash olive oil
1/2 tsp cumin powder or cumin seeds
1/2 tsp paprika
Method:
- Take your cup of rice and dry fry it in some oil for 3-4 minutes, stirring frequently. When the rice starts to slightly brown add 1.5 cups of water, chili flakes(quantity depends on how hot you like it) and a chicken stock cube. Add a half teaspoon of turmeric - that’s where it gets its yellowish colour. Simmer gently until rice is fully cooked and all liquid absorbed. Should only take about 7/8 mins so watch it closely so it doesn't burn.
- Meanwhile, while the rice is cooking, in a separate pan/pot fry some mixed peppers cut up nice and small and peas (frozen is fine) in a little olive oil, salt, pepper. Then add half teaspoon of cumin and/or paprika if you have it.
- Once rice is cooked in the other pan, add in your pea/pepper mixture to rice and mix up and it's ready to serve .
Serving Suggestion:
These taste great with spicy chicken skewers or served at a side at a BBQ.
