Simple and healthy spring salad


I love a fresh salad for lunch coming into spring. With lots of kale, spinach and avocado. You can really add just about anything to these salads and then store them in lunchboxes if you prep on a Sunday for the week ahead. 

Ingredients
Hand full kale
Hand full spinach or mixed leaves like rocket
1 ripe avocado 
Half a sweet red pepper, sliced
Pomegranate seeds to decorate (optional)
4/5 Cherry tomatoes, halved 

Dressing
Pinch rock Salt 
2 tbls Olive oil
2 tbls Balsamic vinegar 

Method
  1. Add all the green leaves, the tomatoes and the red pepper and toss it all together.
  2. Add sliced avocado on top and sprinkle with pomegranate seeds.
  3. Mix up your dressing and drizzle all over.
  4. Serve and enjoy.
