No Flour banana pancakes
I love traditional pancakes or crepes but lately I have been trying a few different types of pancake recipes. This one I particularly like as it so quick and easy. Its really just basically eggs and banana , so for those of you trying to avoid flour this one is for you.
Top tip
Since the batter has no flour and the egg and banana makes for a very sticky batter, I would recommend you keep your heat on low instead of high as you would normally cook pancakes. Since the batter makes a pancake that is thick and fluffy compared to a crepe, the lower heat allows them to cook through. I also keep them small so they are easy to flip/turn in the pan.
Ingredients
1 large banana
1⁄2 tsp baking powder
2 medium eggs
1⁄2 tsp of vanilla essence
olive oil for frying
To Decorate
french cream/natural low fat yogurt
mixed berries such as raspberries/blueberries
honey
pecans,cashews or walnuts
Description
- Simply mash up the bananas until smooth and then add the eggs, baking powder and vanilla essence. Mix until the batter is smooth. You can do this in a blender, mixer or by hand.
- Heat the oil in a non stick frying pan.
- Keeping the heat on low, pour in about 2 tbsp of batter into the pan, keeping the pancake small in diameter, about 4 inches wide, leave it for at least 2-3 minutes until it is completely cooked on one side before attempting to flip. It took me a few attempts to get this right, but after a little practise they make a great pancake.
