Easy mid-week Chicken curry - For busy people
This is an easy mid week meal that can be thrown together and served up in 30 minutes. Sometimes you just don't have the time to marinade and simmer for hours, so this ticks all the boxes when you want something tasty and quick mid week.
The below recipe serves 2, so just multiple accordingly for more.
Ingredients
2 chicken fillets
250 ml chicken stock (optional) or just plain water
1 large onion chopped
1 sweet red pepper
2 tbsp creme fresh/natural yogurt
2 tbsp of curry powder
2 tbsp of garam masala
Handful of fresh coriander
To serve
Basmati/Pilau rice
Flatbreads/wholemeal pitta breads(optional)
Method
- Heat a little olive oil in a frying pan and brown your chicken, then add your onions and red pepper and continue to cook for another 5 minutes until soft.
- Next add your curry powder and garam masala to the pan, covering the chicken , and let them toast dry in the pan for a few minutes.
- Add in your water or stock next and cover and let it simmer for 10 minutes
- At this point you can put on your rice, it should also take about 8-10 minutes and they should be ready at the same time.
- After about 5 minutes, add in your creme fresh to thicken sauce and just a few minutes before serving add in your chopped coriander.
- Serve with rice and/or toasted flatbreads or pitta bread.
Healthy switches
The chicken stock is optional, it adds depth of flavour but if you don't have it, or are trying to avoid chicken stock cubes because of the salt, it still tastes great without it, just add a little salt and pepper to season instead. I use creme fresh to thicken the sauce but have also switched it out for low fat natural yogurt on occasion and its just as good.
