Easy Mid-week Chicken Fried Rice
This is a simple yet satisfying meal to serve mid week and is so quick to make. You can mix it up by adding prawns or chicken or have it with no meat and extra veg like mushrooms and red peppers if you prefer.
The recipe below suits for 2 people but you can increase measurements accordingly.
Ingredients
2 chicken breasts (or left over roast chicken also works great)
¼ cup frozen peas
1 egg
2 scallions
olive oil/sesame oil
1 tsp reduced salt soy sauce
salt and pepper to season
For rice for 2 people
¾ cup rice (I like using basmati or brown rice)
1½ cup water
Method
- Make rice as normal, in a pot or rice maker.
- Meanwhile fry your chicken or cook it in the oven whichever you prefer. Set aside.
- Beat your egg and scramble it in the pan, also set aside.
- Now fry your scallions and frozen peas in a little olive oil for a few minutes. Add in your chicken and rice, and egg. Mix well and fry together for a few minutes to allow flavours to blend.
- Add your soy sauce and serve.
