Chocolate tray bake
This is a great recipe for family or kids parties , its quick and easy too and goes down a treat. And you can decorate it with just about anything, maltesers or marshmallows or even smarties. It also looks good with the extra feathered white chocolate icing on top.
Ingredients
50g of cocoa powder
175g self raising flour
275g caster sugar
125ml milk
100g butter (take it out of the fridge in advance to soften it)
3 large eggs
1 tsp baking powder
6 tsp boiling water
To decorate
4 tbsp of warmed apricot jam
100ml double cream
100g white chocolate
200g milk chocolate (chips or chopped up)
packet maltesers (optional)
Dr oetker chocolate stars(optional)
Directions
- Preheat oven to 180℃ and grease and line your tray with parchment. I use a 12x9in traybake tin.
- First mix the cocoa powder with the boiling water until smooth and all lumps are gone. Then add in the butter and combine until smooth.
- Next you can add all the remaining ingredients and mix all together. I refer to do this in a mixer but you can also do this by hand.
- And that's it, very simple, you now have your batter ready, and can pour it out into your prepared tray tin and put it in your oven for 30-35 minutes. Check it after 30 minutes to see if its firm to the touch and shrinking away slightly from the sides, if not leave it for 5 more minutes.
- Leave it to cool in the tin for about 15 minutes, and then turn it out on a wire rack, peeling off the parchment.
- Meanwhile heat your apricot jam in a pot and sieve it if necessary, brush the jam over the entire cake and leave it to cool on the rack until it is completely cool.
